A peek at leeks: Cooler than onions? Leeks are more delicate, with a sweeter flavor. Although they're pretty, they're often pretty dirty. Rinse, cut off the root, slice lengthwise, chop and then rinse again. Separate lightly, and submerge them into a cold water bath for 10 minutes.
